Favorite Meal of the Week

Hello Fit Friends!
It's Patty here and first let me start off my saying this: If you have not yet seen Les Miserables yet, you need to log off the computer, get in a car, or whatever your preferred choice of transportation is, and drive to your nearest theater. Oh! And see the movie of course! I cried..... like a baby. Eddie Redmayne + beautiful, luscious, old language + a wonderful storyline = GO WATCH IT NOW. Also, I'm super stoked to watch The Great Gatsby.

Okay, now that I've got that out of the way let's get to the point of the post. This week I've been loving chicken, sweet potatoes, and cucumbers... not blended together, I don't recommend doing that but if you do, tell me how it goes. Okay, anyways enough silliness, if you want to get in on this deliciousness, read on!

Ingredients:
A few pieces of chicken (breast, leg, or thigh)
Whatever you choose to prepare and cook your chicken
5 Sweet potatoes
2 mini cucumbers (I buy mine from Costco)
1 small lemon
Cumin
Cinnamon

Okay so let's start with the chicken. You can cook your chicken however you would like but I recommend grilling it, healthy and simple. Once you've done that just top it off with a few sprinkles of cumin and squeeze half of a small lemon onto the chicken! Easy as that!

For the sweet potatoes, I recommend baking a few at a time and also maybe baking them at least 2 hours before you plan to eat them because they do take a while to bake. First, preheat your oven to 325-350 degrees F. Line a baking sheet with foil and lay out your sweet potatoes. Cut 5 "sweet potatoe- sized" pieces of foil and wrap them around your sweet potatoes. Lie them back down onto your baking sheet and pop them into the oven for about an hour. Take them out when the time is up and sprinkle as much, or as little, cinnamon and your healthy heart desires. I LOVE cinnamon and it's really great for your metabolism!

Okay, now for the easiest part of this recipe, the cucumbers! All you're going to do is wash your mini cucumbers, cut off the ends, and slice them, wah-laa! If you like plain cucumbers then you're done, but I like to jazz mine up a bit and squeeze half of a lemon over top and sprinkle some cumin onto those bad boys!
